Restaurant inspections for Sept. 3

Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment, at the Thurston County Environmental Health Office and their website at co.thurston.wa.us/health/ehfood. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

JIM BOB’S CHUCK WAGON

June 4: 35 red; 0 blue

Comments: Baked beans with hamburger and bacon found cooled at 6 inches in walk-in. This and at TCS foods must be cooled at 2-inch depth and uncovered. Corrective action: Disposed. Both hand-wash sinks in kitchen not properly functioning, one with disabled water supply because of leak, the other with jammed paper towel dispenser. Men’s restroom hand sink had no hot water available due to faucet handle missing.

Update, June 12, 2020: The establishment’s normal procedures for cooling foods were observed and deemed safe and do follow regulations. Continue to verify hand-wash sinks are functional and well-supplied and food safety procedures, like cooling, are consistently followed.

EL TACO AMIGO

3720 Pacific Ave. SE (mobile food unit)

June 23: 20 red; 8 blue

Comments: Pan of diced, raw chicken on counter at 35-65 degrees F. Frozen food must be thawed in refrigerator. All food in tall upright refrigerator at 47-55 degrees F. This unit is not properly working. No order refrigeration available for safe storage, therefore this mobile food unit must close. The indirect drain is overflowing with wastewater, indicating the wastewater tank is at capacity and must be emptied. Because wash water cannot be utilized and wastewater continued, wastewater cannot be properly retained and is flowing onto the floor, this mobile food unit must close. This MFU is ordered closed until main refrigeration is replaced or repaired to be properly functioning and the wastewater tank is properly emptied. This unit is closed for at least 24 hours. No hot water at hand-wash sink. Bag of ice stored in hand-wash sink. Restore hot water supply. Do not block hand-wash sink at any time.

In an email to The Olympian, Senior Environmental Health Specialist Sammy Berg included the following additional information from this inspection: “Routine inspection of 6/23/2020 found conditions of imminent health hazards that could not be corrected during inspection. This resulted in an involuntary closure for 24hrs to allow operator to fully mitigate the issues. These issues were corrected and verified by Al Quiocho the next day.”

Comments: Manual thermometer 5 degrees F too low. Corrected. Digital thermometer OK.

SOUTHEND GROCERY

6450 Capitol Blvd. SE

June 30: 0 red; 5 blue

Comments: Eggs displayed in reach-in refrigerator on top-most shelf. These should be stored on lowest shelf, below all other food to prevent potential contamination during breakage.

NEW SUSHI & TERIYAKI

5401 Corporate Center Loop SE, Lacey

Aug. 10: 25 red; 8 blue

Comments: Pan of cooled, breaded chicken from walk-in stored at stove was 55 degrees F. Strainer with cooked beef at stove at 74 degrees F. TCS foods must not be stored at room temperature. Dish-wash machine does not provide any chemical sanitizer. Repair as soon as possible. Manually sanitize dishes and equipment. Door-handle surfaces of refrigerator are dirty. Clean and sanitize regularly.

MECONI’S ITALIAN SUBS

111 Tumwater Blvd. SE, Tumwater

Aug. 26: 0 red; 5 blue

Comments: Sanitizer in-use in kitchen had no QUAT content. Maintain kitchen sanitizer at 200-400 ppm QUAT.

KOIBITO JAPANESE RESTAURANT

730 Sleater Kinney Road SE

Aug. 31: 60 red; 5 blue

Comments: Par-cooked chicken in top of prep fridge at 76 degrees F. Must cool in walk-in at 2 inches food depth. Pan of fried rice stored at room temperature (50 degrees F). Many non-food surfaces have grime and grease, such as refrigeration doors and handles. Clean and sanitize regularly to prevent build-up. This can be contamination that can eventually get in food via gloved hands. Cardboard being used as floor covering. Greasy and dirty. Do not re-use cardboard as floor covering. Hand-wash sink in kitchen has no hot water and one faucet handle missing. Hand-wash sink at sushi counter has clamping pliers for one faucet handle. Restore water supply and repair faucets of hand sinks within five days. Fried rice in walk-in cooled in large bin and at 3 inches food depth. Other cooked rice cooled in cooking pot at greater than 4 inches. Must cool uncovered and at 2 inches food depth. Discarded. A re-inspection is required within 10 days.
