Restaurant inspections for May 13

Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment, at the Thurston County Environmental Health Office and their website at co.thurston.wa.us/health/ehfood. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: Contact and dishwasher sanitizer, 100 ppm, chlorine. Cooked rice being kept in 12-inch, square tubs on table at 120-129 degrees F. These must be kept hot, above 135 F, or cooled at 2 inches, uncovered. Corrective action: uncovered and moved to two-door in back. Corrective action: reheated to 165 F, then returned to cookers in “warm” mode. Monitor hold-holding capabilities. Take temperatures for two hours after placement of rice. Will follow up in two weeks.

Don Garcia’s Mexican Restaurant

4660 Whitman Lane SE

May 5: 35 red; 0 blue

Comments: Contact sanitizer, 100 ppm, chlorine. Four pans of salsa ranchera at 78-69 degrees F, cooling outside of refrigerator. Must put in walk-in cooler soon after arranging at 2 inches food depth. Corrected: moved to walk-in. Corrected: keep in under-counter fridge.

May 5: 10 red; 2 blue

Comments: Dishwasher sanitizer, 50 ppm, chlorine. All foods in two-door merchandiser by grill at 49-55 degrees F. TCS foods must be cold-held at or below 41 degrees F. Corrective action: move food to other properly working refrigerator. This unit must be replaced by a commercial NSF-approved refrigerator in 45 days. Vinyl flooring damaged in large area. Replace or repair in 90 days.

April 30: 10 red; 0 blue

Comments: Bean sprouts draining off rinse water at 45 degrees F. Keep colander of bean sprouts in refrigerator.

3430 Pacific Ave. SE, Olympia

April 30: 35 red; 0 blue

Comments: Container of gyoza kept out of refrigerator at 50 degrees F. Must keep cold, below 41 degrees F. Do not store at room temperature. Corrective action: moved to refrigerator. No paper towels at hand sink. Keep hand sink supplied at all times with soap and paper towels.
