Reading inspection scores:

• Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
• Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
• Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
• Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: Refrigeration door surfaces have build-up of grime. Well of steam table has filthy liquid inside, clean and sanitize these areas regularly. A green garden-type water hose connected to the site’s water source is utilized for the MFU. Obtain and use a potable drinking water, approved hose. No less than six bags of garbage were found inside the storage shed on this site. Three picnic tables provided for on-site seating. When there is seating provided for customers, restroom facilities within 200 feet must be provided. The picnic tables must be removed in one day.

Sept. 8: 25 red; 0 blue

Comments: Fried rice and steamed rice, cooling at 3-4 inches, covered in two-door reach-in. Must cool at 2-inch food depth. Corrected.
